Ingredients
Method
- Divide the beef into 4 and shape into patties slightly wider than the buns. Press a shallow dimple in the centre of each. Keep cold.
- Butter the cut sides of the buns and toast in a hot pan until golden.
- Heat a heavy skillet or grill until very hot.
- Season the patties generously just before cooking and cook for 3 minutes.
- Flip, add the cheese and cook for 2–3 minutes more, until the centre reaches 71°C (160°F).
- Build the burgers with sauces, lettuce, tomato, onion and pickles.
Notes
Season only the outside, just before cooking. Mixing salt into the meat makes the patty dense.
