Ingredients

  • 3 sheets gelatine (about 6 g)
  • 500 ml double cream
  • 150 ml whole milk
  • 70 g caster sugar
  • 1 vanilla pod split
  • 250 g mixed berries
  • 1 tbsp icing sugar

Method

  1. Soak the gelatine in cold water for 5 minutes.
  2. Heat the cream, milk, sugar and vanilla until steaming. Do not let it boil.
  3. Take off the heat, squeeze the gelatine dry and stir it in until dissolved.
  4. Strain into 6 small moulds or glasses and chill for at least 4 hours.
  5. Toss the berries with the icing sugar and leave for 10 minutes.
  6. To unmould, dip each mould in hot water for a few seconds and turn out. Serve with the berries.

Notes

For a softer set to serve in glasses, use 2½ sheets of gelatine instead of 3.
