Ingredients

  • 50 g fine bulgur
  • 3 large bunches flat-leaf parsley finely chopped
  • 1 small bunch mint finely chopped
  • 4 ripe tomatoes finely diced
  • 4 spring onions finely sliced
  • 4 tbsp lemon juice
  • 5 tbsp extra virgin olive oil
  • 1/2 tsp ground allspice (optional)
  • Salt and black pepper

Method

  1. Rinse the bulgur and put it in a bowl with the diced tomatoes and their juice and the lemon juice. Leave for 10 minutes to soften.
  2. Wash and thoroughly dry the herbs, then chop finely with a sharp knife.
  3. Combine the herbs, spring onions, tomatoes and bulgur.
  4. Dress with olive oil, allspice, salt and pepper and toss.
  5. Serve immediately with small lettuce leaves.

Notes

Dry the herbs completely before chopping and use a sharp knife, not a processor, or the parsley turns to mush.
