Ingredients

  • 2 pita breads torn into pieces
  • 5 tbsp extra virgin olive oil divided
  • 1 romaine lettuce chopped
  • 2 tomatoes chopped
  • 1 cucumber chopped
  • 5 radishes sliced
  • 3 spring onions sliced
  • 1 handful parsley chopped
  • 1 handful mint chopped
  • 2 tbsp lemon juice
  • 1 tbsp pomegranate molasses
  • 1 clove garlic crushed
  • 1 tbsp sumac
  • Salt

Method

  1. Heat the oven to 200°C. Toss the pita with 2 tablespoons of oil and bake for 8–10 minutes until crisp.
  2. Whisk the lemon juice, pomegranate molasses, garlic, sumac, salt and remaining oil.
  3. Combine the lettuce, tomatoes, cucumber, radishes, spring onions and herbs.
  4. Toss with the dressing, add the pita just before serving and sprinkle with more sumac.

Notes

Add the pita at the last moment so some pieces stay crunchy and others soak up the dressing.
