Jiro Ono was born in 1925 and has spent most of his life making sushi. His small counter restaurant, Sukiyabashi Jiro, is in a basement in Tokyo’s Ginza district.

He is known for Edomae-style sushi served as a set sequence chosen by the chef, and for the discipline of his training: apprentices spend years on preparation tasks before making sushi.

The 2011 documentary Jiro Dreams of Sushi, directed by David Gelb, brought his work to an international audience.
