Use this oven temperature conversion tool when a recipe gives a temperature your oven does not use. Enter the number from the recipe in Fahrenheit, Celsius, Celsius fan or gas mark and you see all four at once, rounded the way oven dials are marked. The full chart below the converter covers every common setting from 225°F to 500°F.

Moderate
350°F is 180°C, 160°C fan or gas mark 4. That is a moderate oven.
Exact: 176.7°C. Ovens are marked in steps of 10°C. In a US convection oven, use 325°F.

How oven temperature conversion works
To turn Fahrenheit into Celsius, subtract 32, multiply by 5 and divide by 9. To go from Celsius to Fahrenheit, multiply by 9, divide by 5 and add 32.
- 350°F: (350 − 32) × 5 ÷ 9 = 176.7°C
- 400°F: (400 − 32) × 5 ÷ 9 = 204.4°C
- 200°C: 200 × 9 ÷ 5 + 32 = 392°F
Why oven temperatures are rounded
Oven dials do not show 177°C or 392°F. Celsius ovens are marked in steps of 10 degrees and most American recipes use steps of 25°F, so recipes round to the nearest mark. That is why 350°F becomes 180°C and 400°F becomes 200°C. A difference of a few degrees makes no real change to how food cooks, and most home ovens vary by more than that anyway.
Fan ovens and convection ovens
A fan oven, called a convection oven in the US, blows hot air around the food so it cooks faster and browns more evenly. Recipes from the UK, Australia and New Zealand often list two temperatures, such as “180°C or 160°C fan”.
- Fan oven: set it about 20°C lower than a conventional recipe.
- US convection oven: set it about 25°F lower, or check the food 5 to 10 minutes early.
- Some newer ovens lower the temperature for you in convection mode. Check your oven manual before you subtract twice.
What gas marks mean
Gas marks are used on gas ovens in the UK and Ireland. Gas mark 1 is 275°F and each mark after that is 25°F hotter, up to gas mark 9 at 475°F. Below gas mark 1 there are gas mark ½ (250°F) and gas mark ¼ (225°F) for very slow cooking.
Oven heat levels explained
Older recipes and many British cookbooks describe the oven instead of giving a number. These are the ranges the converter uses:
- Very low: 225 to 250°F (110 to 120°C), gas mark ¼ to ½
- Low: 275 to 300°F (140 to 150°C), gas mark 1 to 2
- Moderate: 325 to 350°F (160 to 180°C), gas mark 3 to 4
- Moderately hot: 375 to 400°F (190 to 200°C), gas mark 5 to 6
- Hot: 425 to 450°F (220 to 230°C), gas mark 7 to 8
- Very hot: 475°F (240°C) and above, gas mark 9
Tips for accurate oven temperatures
- Preheat for at least 15 to 20 minutes. Many ovens beep before the walls are fully hot.
- Hang an inexpensive oven thermometer in the center of the oven. Ovens often run 10 to 25°F off.
- Bake on the middle rack unless the recipe says otherwise.
- Keep the door closed. Each peek can drop the temperature by 25°F or more.
- Dark metal pans brown faster than light ones. Lower the oven by 25°F if your bakes brown too quickly.

Oven temperature FAQ
What is 350°F in Celsius?
350°F is 176.7°C, which ovens mark as 180°C. In a fan oven, use 160°C fan. On a gas oven it is gas mark 4.
What is 180°C in Fahrenheit?
180°C is 356°F. Recipes and ovens round it to 350°F, which is gas mark 4.
How do I convert Fahrenheit to Celsius?
Subtract 32, then multiply by 5 and divide by 9. For example, (400 − 32) × 5 ÷ 9 = 204°C. Oven dials are marked in steps of 10, so set it to 200°C.
How much lower should a fan or convection oven be?
Set a fan oven about 20°C lower than the recipe, or a US convection oven about 25°F lower. A recipe that says 180°C becomes 160°C fan, and 350°F becomes 325°F on convection.
What does "C fan" mean in a recipe?
It is the temperature for an oven with a fan that circulates hot air, called a convection oven in the US. Recipes from the UK, Australia and New Zealand often list it next to the conventional temperature.
What gas mark is 350°F?
Gas mark 4. Each gas mark from 1 to 9 is 25°F apart, starting with gas mark 1 at 275°F and ending with gas mark 9 at 475°F.
What is a moderate oven?
A moderate oven is 325 to 350°F, or about 160 to 180°C, gas mark 3 to 4. Older recipes use it for cakes, cookies and casseroles.
Is my oven the right temperature?
Many ovens run 10 to 25°F hotter or cooler than the dial. Hang an oven thermometer in the center of the oven, preheat for 20 minutes and compare. Then adjust the dial to match.
