Ingredients

  • 700 g beef mince (20% fat)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 slices American or cheddar cheese
  • 4 brioche or potato buns split
  • 2 tbsp butter softened
  • 4 leaves iceberg lettuce
  • 1 large tomato sliced
  • 1 small onion thinly sliced
  • 8 dill pickle slices
  • Ketchup mustard and mayonnaise, to serve

Method

  1. Divide the beef into 4 and shape into patties slightly wider than the buns. Press a shallow dimple in the centre of each. Keep cold.
  2. Butter the cut sides of the buns and toast in a hot pan until golden.
  3. Heat a heavy skillet or grill until very hot.
  4. Season the patties generously just before cooking and cook for 3 minutes.
  5. Flip, add the cheese and cook for 2–3 minutes more, until the centre reaches 71°C (160°F).
  6. Build the burgers with sauces, lettuce, tomato, onion and pickles.

Notes

Season only the outside, just before cooking. Mixing salt into the meat makes the patty dense.
