Ingredients

  • 800 g boneless chicken thighs cut into 3 cm cubes
  • 4 tbsp olive oil
  • 3 tbsp lemon juice
  • 3 cloves garlic minced
  • 2 tsp dried oregano
  • 1 tsp sweet paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 skewers
  • 4 pita breads
  • Tzatziki tomato and red onion, to serve

Method

  1. Mix the oil, lemon juice, garlic, oregano, paprika, salt and pepper. Add the chicken and marinate for at least 1 hour.
  2. If using wooden skewers, soak them in water for 30 minutes.
  3. Thread the chicken onto the skewers.
  4. Grill over high heat for 10–12 minutes, turning, until charred and cooked through.
  5. Warm the pitas on the grill.
  6. Serve with tzatziki, sliced tomato and red onion.

Notes

Do not marinate for more than 24 hours. The lemon starts to break down the meat.
